Carrot and apple soup (serves 5-6)

1 tablespoon olive oil

1 medium onion, peeled and chopped

1 large carrot, peeled and chopped

1 small leek, rinsed and chopped

1 apple, peeled, cored and chopped

3 cups of chicken stock or veg stock (low salt)

salt and black pepper

What to do

Add the oil to a pan and add the chopped onion, leek, carrot and apple. Saute on a medium heat for about 5 minutes until the onion is translucent. Turn heat down and leave for another few minutes stirring regularly. Add the stock, a dash of salt and pepper and bring to the boil for about 5 minutes. Reduce the heat and simmer for around 20 minutes or until the carrots are soft. Remove from the heat and let it cool slightly. Add the soup to a blender and blend until smooth. Add a bit of water if it is too thick for you. Serve with chunky wholegrain bread.
