*2 servings (*this was made in a small oven dish but you can increase ingredients to make more)
100g rolled oats
fresh berries (e.g. blueberries) and cherries (pitted and chopped in half) *or dried
20g walnut halves, chopped (or almonds. *you could also add pumpkin seeds)
2 tablespoons flax seed
2 tablespoons olive oil
1 tablespoon honey (good quality)
1 teaspoon cinnamon
What to do
Preheat oven to 350 degrees Fahrenheit and line a baking tray with baking paper. In a bowl, combine the oats, nuts, flax seed, and cinnamon and stir.
Pour the oil and honey over the oats and mix until the oats and nuts are coated. Pour the granola onto your prepared tray and use a spoon to spread it in an even layer. Bake for about 20-30 minutes until golden, stirring halfway. Don’t leave in too long as the granola will further crisp up when it cools.
Let the granola cool completely, and then add either the fresh chopped cherries with berries or dried fruit. Store the granola in an airtight container.
*It will keep for 1 to 2 weeks if using dried fruit, but will only keep a short time with fresh fruit.
