Guacamole (serves 4)

1 1/2 medium avocados
170 grams non fat Greek yoghurt
1 tablespoon lime juice
1/4 teaspoon lime zest
2 cloves garlic, minced
1 cup cherry tomatoes, diced
1/2 a chilli, chopped
1 teaspoon coriander, chopped finely

What do to

Scoop out the flesh from the avocados. In a bowl mash the avocados with the Greek yoghurt. Add the lime juice, lime zest, and the garlic to the bowl. Stir until mixed well. Once mixed, add the tomatoes, chopped chilli and the chopped coriander to the bowl. Mix well, and enjoy. Serve with wholemeal pitta bread or veg sticks.
