½ cup quinoa
½ cup rolled oats
3 small bananas
1 cup blueberries
½ cup raspberries
2 cups milk
2 large eggs
½ teaspoon cinnamon
1 scoop flavoured protein powder (optional for higher protein)
2 tablespoons honey (don’t add if you’ve added protein powder)
Greek yoghurt to serve (optional)
What to do
Pre-heat the oven to 375 degrees F and grease a square baking dish (about 8 x 8). Rinse quinoa and oats in cold water until water runs clear, drain and leave to one side.
Slice the banana.
In a large bowl whisk the eggs, milk, cinnamon, honey (or protein powder if using this).
Lay half of the sliced banana pieces, blueberries and raspberries in a layer at the bottom of baking dish. Spoon the quinoa and oats on top spreading evenly. Top with the rest of the banana and berries.
Slowly pour the egg mixture into the corners of the dish and gradually over the top (evenly distributed). Put in oven and bake for 60 minutes.
Once done remove from oven and let it cool. Cut into slices and serve with Greek yoghurt.
