Quinoa granola with yoghurt (makes around 4 cups)

2 cups rolled oats

1/2 cup uncooked quinoa, rinsed

1/2 cup chopped almonds

2 tablespoons flax seeds

1/2 teaspoon cinnamon

dash of salt

1/4 cup honey

2 tablespoons extra virgin coconut oil, melted

cup raisins

Greek yoghurt

What to do

Pre-heat the oven to 325 degrees and line a baking sheet with baking paper. Combine all ingredients EXCEPT the raisins in a large bowl and mix. Spread the mixture on the baking sheet and bake for fifteen minutes, stirring half way through. Don’t let it get to dark. Once out of the oven let it cool slightly and then mix in the raisins. Serve with Greek yoghurt.
