Spicy carrot and red lentil soup (Serves 4)

3 medium carrots, peeled washed and coarsely grated

140g split red lentils

2 teaspoons of cumin powder

1 medium onion, peeled and chopped

3 garlic clove, peeled and chopped

1 teaspoon chilli powder

1 tablespoon olive oil

1 litre of vegetable stock

What to do

Heat a large saucepan and add the oil. Add the onion and fry until soft. Then add the garlic and carrots and fry for another couple of minutes. Add the lentils, cumin, chilli powder and the stock and bring to the boil for around 20 minutes (the lentils are cooked when they are soft and swollen). Take the soup off the heat and blend until smooth. Season with black pepper. Serve with some wholegrain bread. Enjoy!
