Spicy turkey and sweet potato soup (serves 4)

1 tablespoon olive oil

1 red onion, peeled and chopped

3 cups vegetable or chicken stock

1 red pepper, deseeded and chopped

Large handful of kale, chopped

Left over turkey, chopped into chunks

1 teaspoon cumin

1 teaspoon Garam masala

Black pepper

Dash of salt

300g Sweet potato, peeled and cubed

What to do

Put a pan on a medium heat and add the oil. Add the chopped onion and sauté until softer. Add the chopped pepper and stir for a couple of minutes. Add the stock and then add the sweet potato cubes. Add the cumin, Garam masala, a dash of salt and black pepper and simmer for around 15 minutes until the sweet potato is softer. At this point add the chopped kale and leave for 5 minutes. Then carefully put half of the soup mixture into a blender and blend until smooth. (The reason we don’t blend all of it is because it gives a nice texture having part chunky and part blended and also looks nicer). Add the blended half back into the pan with the rest of the soup mixture and turn heat on low. Add the turkey chunks and simmer for a few minutes longer. Remove from the heat and serve.
